About Granulated sugar

Granulated sugar packs consistently and is much less sensitive to scooping technique than flour. Whether you spoon it in or scoop directly, 1 cup of granulated sugar reliably gives about 200 g. This makes sugar one of the easier baking ingredients to measure by volume.

Caster sugar (superfine sugar) and granulated sugar have similar densities and are interchangeable at 200 g/cup. Raw or demerara sugar is slightly denser and may give 210–220 g per cup. In Nordic recipes, 1 dl granulated sugar = about 83 g — a useful number for adapting Scandinavian recipes to US measurements.

For large quantities (more than 2 cups), weighing becomes more convenient and reliable. 200 g per cup is a clean enough number that multiplying by whole cups is easy: 3 cups = 600 g, 4 cups = 800 g, 5 cups = 1 kg.
